Ingredients - Salad
4 Beetroot, cooked and peeled
300g Baby spinach leaves
1/2 cup Feta, crumbled
1/4 cup Pumpkin seeds
Ingredients - Dressing
1/2 cup Olive oil
1/4 cup Lemon juice
2 TBSP Laager Rooibos syrup (see recipe below)
To taste Salt and pepper
1/4 cup Pumpkin seeds
Ingredients - Laager Rooibos Syrup
500ml Water
500ml White sugar
50ml Honey
12 Laager Rooibos teabags
1 Cinnamon stick
8 Black peppercorns
1/2 tsp Aniseed
Method - Laager Rooibos Syrup
- To make the Laager Rooibos syrup, combine ingredients in a large pan. Stir over a low heat until all the sugar has dissolved, then boil over a moderate heat for 15 minutes. Strain syrup and allow it to cool before using in the Laager Rooibos Dressing.
Method - Salad
- Mix all the Laager Rooibos dressing ingredients together and set aside.
- Layer the salad ingredients in a salad bowl.
- Top with pumpkin seeds and drizzle with Laager Rooibos dressing.
