Ingredients - Laager Rooibos Dressing
4 TBSP White Wine Vinegar
60ml Laager Citrus & Ginger Flavoured Green Rooibos, strongly brewed
1 TBSP Orange Rind, grated
5cm Ginger, minced
3 TBSP Golden Syrup
Pinch Salt and Pepper
Ingredients - Salad
3 Cups Mixed Salad
2 Avocados, cubed
1 Can Chickpeas, drained
400g Cooked Prawns, skinless and veined
1 Red Onion, sliced
2 Oranges, cut into segments
30ml Pickled Ginger, chopped
2 TBSP Parsley, chopped
Method
- Add boiling water toLaager Citrus & Ginger flavoured Green Rooibos, allow to brew for 5 minutes then allow to cool
- Whisk all the dressing ingredients together. Refrigerate for 10 minutes to allow flavours to infuse
- Assemble salad into a bowl
- Drizzle with dressing
*You can add croutons, for that extra crunch - if desired
