Ingredients
- 250 ml brewed rooibos tea (using 1 Tea4kidz Apple & Berry flavoured Rooibos teabag), cooled.
- 250 ml oats (rolled oats or quick oats)
- 250 ml whole wheat flour
- 5 ml baking powder
- 1 apple, grated.
- 60 ml honey or maple syrup
- 60 ml full-cream plain yoghurt (for added protein)
- 1 apple, to garnish
Method
- Preheat your oven to 180°C. Grease a muffin tin or line with paper liners.
- In a large bowl, combine the brewed rooibos tea and oats. Let them soak for about 10 minutes.
- After soaking, add the whole wheat flour, grated apple, honey or maple syrup, plain yogurt, and baking powder to the bowl.
- Mix until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Optional: Add thin apple slices on top as garnish.
- Bake for 18-20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Additional Tips:
- You can enhance the protein content further by adding a scoop of protein powder (vanilla or unflavored) if desired, adjusting the liquid consistency as needed.
- These muffins are best enjoyed fresh but can be stored in an airtight container for a few days or frozen for longer storage.
These muffins now have added protein from plain yogurt, making them a nutritious option for a high-fibre, moderate-protein snack or breakfast.
